Chicken Fajitas

Ingredients

Spice mix

  • 1 Tbsp chili powder I omitted
  • tsp granulated garlic I did 1 heaping tsp and grated 1 large clove of garlic
  • tsp granulated onion I did 1 heaping tsp
  • 1 tsp paprika
  • ½ tsp cumin scant
  • 2 tsp oregano
  • tsp smoked paprika
  • 1 tsp brown sugar
  • 1 T cajun spice mix optional, I used it because I had it
  • I also added ¼ tsp turmeric and ¼ tsp pepper
  • fresh coriander

Remaining ingredients

  • 800 g boneless skinless chicken breast or thigh cut into strips
  • 4 bell peppers cut into strips
  • 1 large yellow onion thinly sliced. I did 1 yellow and ½ red
  • ¾ tsp salt
  • drizzle of olive oil
  • 2 limes or lemons

Toppings

  • grated cheddar cheese, creme fraiche, coriander, avocado slices, guacamole

Instructions

  • In a small bowl, mix together all the spices,
  • Add 3/4 of the spice blend in a bowl with the chicken along with half the grated garlic, about 1 Tbsp of olive oil and the juice of 1 lime or lemon, mix together well and set aside for at least 10 minutes or up to overnight.
  • In another bowl, mix the vegetables with another 1 Tbsp olive oil and the rest of the spice mix and a squeeze of lemon/ lime. Same as the chicken, can rest overnight or use right away.
  • In a large cast iron skillet over medium high heat, add a drizzle of oil, allow to get hot and then working in batches, cook the chicken until caramelized.
  • Remove to a plate, then cook the peppers and onions in batches as well with a touch more oil.
  • Once all cooked, add it all together, top with some cilantro and a squeeze of lime and serve with your favorite toppings.
