Roasted summer tomato soup

Ingredients
- 1.2 kg summer Roma tomatoes halved lengthwise
- 600 g plum or cherry tomatoes whole
- 2 x 400 ml cans tomato puree or plum tomatoes if tomatoes not in season
- 1 large yellow onion chopped (optional)
- 3 tablespoons olive oil
- 8 cloves garlic peeled
- 500ml up to 1L vegetable broth or leftover whey depending on how thick you want the soup
- ½ teaspoon dried oregano
- Freshly ground salt and pepper
- 1 cup lightly packed fresh basil leaves roughly torn
- Whole dairy milk/heavy cream for a creamy texture
For the caramelized onions (optional):
- ½ tablespoon olive oil
- 2 yellow onions thinly sliced
Grilled cheese
- dash of Worcestershire sauce
- sliced stale bread/ baguette
- half the roasted garlic gloves
- sliced smoked provoletta cheese, or any other melty cheese or feta
Instructions
- Preheat oven to 150-170°C. Place tomatoes on a baking tray with the garlic cloves and onion (optional). Drizzle with 2 tablespoons of oil, season with salt and pepper, and roast for about 35-40 minutes, or until soft and plum tomatoes are soft and bursting.
- Heat 1 tablespoon of oil in a medium-sized pot/saucepan over medium-low heat. Add the tomatoes, garlic (reserve some for a side of grilled cheese or garlic bread), oregano and the broth/ whey. Simmer for about 15 minutes.
- Add the basil, saving 2 tablespoons to use as garnish. Continue to simmer until the basil is just soft (about 2 minutes). Blend soup using a stick blender until smooth.
- Add the cream or milk and bring it to a simmer before turning the heat off.
- Optional: Pour the soup through a strainer or colander to remove any skins and thick tomato pieces, for a smoother soup.
- Sprinkle with extra basil and serve with garlicky grilled cheese. I spread some of the roasted garlic on bread, topped with smoked provoletta cheese. Also could add a dash of Worcestershire sauce. It was phenomenal!
