Skillet Pork Gyros
Servings: 4 wraps
Ingredients
- 650 grams χοιρινη μπριζόλα λαιμού με ή χωρίς κόκκαλο, cut in thin strips
Marinade
- 2 Τ extra virgin olive oil
- 2 T vinegar red or white wine or apple cider
- 1½ T mustard
- 1½ t salt
- ½ t black pepper
- ½ t smoked paprika powder
- ¼ t turmeric powder
- ⅓ t coriander powder
- 1 T oregano
- 1 small onion sliced thinly lengthwise
Instructions
- Coat pork strips in marinade and let rest up to 2 days in the fridge.
- Heat a cast iron skillet through on medium-high heat.
- Cook meat, stirring frequently to brown from all sides. May need to add some water in the beginning, but water will also be released as it cooks. It will take about 15-20 minutes for the meat to be cooked through but remain tender.
- Serve on homemade sourdough discard tortillas with tomato slices, fresh basil leaves and sauerkraut. Or red onion slices, fresh or pickled. Maybe a yogurt dip too!
